Here is a really easy, summery avocado salad that goes with everything from barbecued meat and chicken to fish, flatbreads or whatever protein you are serving. It takes just 5-10 minutes to make – and yet it tastes like something you might be served on a little holiday in southern Europe.
The salad is made up of creamy avocado, crisp cucumber, thin slivers of red onion and plenty of fresh herbs – flat-leaf parsley and dill. It is simply tossed with a little good olive oil, freshly squeezed lime juice, salt and freshly ground pepper – and then it is ready for the table.
It is the kind of salad that manages to be both fresh and substantial at the same time, and it suits everything from grilled dishes and pan-fried chicken to vegetarian flatbreads or fish. It can easily be prepared a couple of hours ahead and kept in the fridge – so it is ready when the rest of the meal is done.
Easy summer salad with avocado and cucumber – ready in 10 minutes
This is one of those salads you keep coming back to – because it is so easy to make, tastes wonderful and goes with just about everything. This avocado salad calls for no advanced cooking – just a little chopping, some lime and oil, and it is done.
You only need a handful of ingredients, and the salad can be prepared well ahead and kept in the fridge – ideal when you have guests, are firing up the barbecue or simply want something fresh and light for dinner.
It is an easy summer salad that combines the softness of avocado with the crunch of cucumber and the freshness of the herbs – all brought together by lime and good olive oil. The result is a cucumber salad with avocado that is both simple and refined at the same time.
Add feta for a creamier, saltier salad
If you want to give the salad an extra lift, try adding a little crumbled feta – it brings a creamy texture and a gentle saltiness that pairs beautifully with avocado, cucumber and herbs.
Feta makes the salad even more filling and nudges it towards Greece – which makes it an obvious side for Greek dishes, grilled skewers, pan-fried meat or a piece of salmon. It is the kind of small addition that lifts the whole salad – without making it any more work.
Avocado salad with cucumber and lime
Ingredients
- 2 avocados
- 1 1/2 cucumber
- 1 small handful of flat-leaf parsley
- 1 small red onion, cut into thin strips
- 3 tbsp olive oil
- 2 tbsp freshly squeezed lime juice
- 2 tbsp fresh dill, finely chopped
Method
- Dice the avocados and slice the cucumber. If the cucumber is thin, simply cut it into slices; otherwise halve it lengthways first and then cut it into slices.Pick the parsley leaves off the stalks and roughly chop them if you like.
- Put the avocado, cucumber, red onion, flat-leaf parsley and dill in a bowl. Drizzle the oil and lime juice over the top and season well with salt and freshly ground pepper.
- Toss the salad well to combine, taking care not to crush the avocado, and keep it in the fridge until you are ready to serve. It can happily be made a couple of hours ahead.
tak for altid god inspiration.
både i denne og i mange andre opskrifter, kan det stærkt anbefales at skifte olivenolie ud med avocado olie.
