An easy and really delicious warm courgette salad with garlic, lemon and Parmesan. It comes together in no time and tastes wonderful. Serve it as a side with all sorts of barbecue dishes, with vegetarian patties, or topped with a good bolognese.
I would strongly recommend investing in a spiralizer – you can make courgette spaghetti in no time, the strands come out beautifully fine, and they are remarkably close to real pasta.
