An easy, no-fuss sandwich with Vesterhavsost (a Danish aged North Sea cheese), mixed salad leaves, pickled red onions and mustard mayo.
This sandwich is inspired by one I had at a cosy little local organic bakery this past summer, when we took a trip to Møns Klint. That one didn’t even have any salad in it, but its simplicity was just so good.
The mayonnaise calls for both Dijon mustard and yellow mustard, and for the yellow mustard I will always recommend French’s Classic Yellow — it has a really good flavour and is nowhere near as sweet as a sweet yellow mustard. So consider it highly recommended.
