Classic Danish chicken soup (hønsekødssuppe) – a soup that, for me, is steeped in childhood memories. Full of tender chicken and freshly cut soup vegetables – hearty, warming and delicious.
This soup is a must every autumn and winter – and the smell alone, mmm, takes me straight back to curling up in comfy clothes at my parents’ house.
It is well worth making a double batch – the soup tastes even better the day after. And if you would rather not cook 2 chickens, you can top the soup up on day 2 with a little meat and melboller (Danish flour dumplings).
