A wonderfully easy tomato salad served as tomato carpaccio, topped with olive oil and homemade Italian seasoning – so simple and so good.
This tomato salad calls for ripe, sweet tomatoes, as the tomatoes are the star here. The oil and the Italian seasoning add plenty of flavour to the salad, but most important of all are the tomatoes.
I have used heirloom tomatoes in different colours, which gives a beautifully colourful result.
If you like, top it with shavings of Parmesan, crumbled feta or similar.
