The easiest and most delicious of Italian classics – pasta aglio e olio. A wonderful dish built on good olive oil and a generous amount of garlic – it really is that simple.
And when I say Italian classic, I should perhaps tread a little carefully, because in my version a good handful of Parmesan goes in too. Is that how it’s done originally? Hmm, I don’t think so 😉 but I find it rounds off the flavour in just the right way – and if you’d rather not, simply leave it out.
Pasta aglio e olio, or pasta with garlic and oil, can be served on its own, or as a side to a piece of chicken, steak or similar.
Season with chilli flakes to taste – their heat varies a great deal depending on where you buy them, so always taste them first.
Spaghetti aglio e olio – ready in just 15-20 minutes, full of flavour and real Italian spirit.
Spaghetti Aglio e Olio
Ingredients
- 500 g spaghetti
- 100 ml good olive oil (important)
- 5-6 cloves garlic, grated or crushed
- 1 pot parsley
- 50 g Parmesan, finely grated
- 100 ml pasta cooking water
- 1/2 tsp chilli flakes – to taste
- Salt and pepper
Method
- Finely chop the parsley stalks and set them aside. Finely chop the leaves too and set these aside as well – keeping the two separate.
- Cook the pasta for one minute less than the packet instructions say.
- Meanwhile, heat the oil in a frying pan over a medium heat, add the garlic and the finely chopped parsley stalks and let them simmer gently in the oil while the pasta cooks.Stir regularly and make sure it doesn’t get too hot – the oil should only just bubble gently, so the garlic turns pale golden and flavours the oil. At home I have the hob on 5 out of 9.
- A couple of minutes before the pasta is done, add the chilli flakes to the pan as well and fry them with the garlic.
- Lift the pasta straight from the pot into the pan and toss it well with the oil.
- Add the Parmesan, the rest of the parsley and the pasta cooking water, and let it all simmer for another minute or so, tossing well the whole time.
- Season to taste with salt and pepper – and serve immediately.
