Danish lemon cake (citronmåne) with mascarpone cream and pistachios
Ingredients
- 1 citronmåne (Danish lemon cake) from the supermarket – or bake it yourself
- 100 g mascarpone
- 100 ml whipping cream (38% fat)
- 2 tbsp icing sugar
- 2-3 tbsp freshly squeezed lemon juice
- 1 lemon, finely grated zest only
- Unsalted pistachios – finely chopped, for the top
Method
- Cut the citronmåne into 6 equal pieces, – remembering to remove the paper first.*If you bake the citronmåne yourself, it will typically be round, – in which case cut it into 8 equal pieces.
- Put the mascarpone, cream, icing sugar, lemon zest and lemon juice in a bowl and whisk briefly until combined.*The lemon makes the cream thicken very quickly, – so whisk on a low speed so you don’t overwhip it. If the cream is overwhipped it will turn grainy.
- Transfer the mascarpone cream to a piping bag, fitted with a star nozzle if you like, – and pipe the cream onto the wide end of each piece.*You can also simply spoon the cream on with a tablespoon.
- Sprinkle with finely chopped pistachios before serving.
