An easy recipe for nectarine salad with rocket, fresh basil and feta.
Nectarine salad simply tastes wonderful, – the slightly bitter rocket is a perfect match for the sweet, crisp nectarine and the salty feta.
I dress my nectarine salad with a simple vinaigrette of nothing more than olive oil, honey, dark balsamic vinegar, salt and pepper. So easy, and so good.
Nectarine salad works as a side for almost anything, – it is especially good with white meat, but also goes beautifully with a piece of salmon or a steak.
We love it in our house, so when nectarines are in season, – nectarine salad is a must.
You can swap the walnuts for salted almonds, – they suit the salad just as well.
Nectarine salad with rocket and feta
Ingredients
- 80 g rocket
- 2 nectarines, cut into thin wedges
- 1 handful fresh basil leaves – about 6 stalks
- 1 handful walnuts
- 100 g feta
Vinaigrette for the nectarine salad
- 3 tbsp olive oil
- 1 tbsp dark balsamic vinegar
- 1 tbsp honey
- Salt and pepper
Method
- Combine the ingredients for the vinaigrette, season with salt and pepper and mix well. Use a whisk if you like, or shake it together in a tightly sealed jar.
- Arrange the rocket, nectarines and fresh basil on a large plate, – crush the walnuts coarsely in your hands and scatter them over the salad.*If you don’t like walnuts, I recommend using salted almonds instead, – they taste wonderful here.
- Crumble the feta and scatter it over the salad, then drizzle the vinaigrette over the top.
- Finish with freshly ground pepper before serving, if you like.
