Grøn urteolie

Green herb oil

Recipe for green oil – a beautiful herb oil made with mixed fresh herbs.
Herb oil is wonderfully decorative, and it adds an elegant flavour to your dishes too.
Try drizzling herb oil into a bowl of creamy soup, into the sauce on a fish dish, or use it in a homemade mayonnaise.
It is elegant and refined in both flavour and looks – and it keeps its bright green colour if you store it in an airtight container in the fridge.
Which herbs you use in your green oil is really entirely up to you – dill, chervil, parsley, chives, basil, wild garlic and so on.
Combine the flavours you prefer, and top up with spinach leaves for the sake of the colour if you don’t want to use the full amount of herbs.
I strain my herb oil just once through a fine-mesh sieve. By only straining it once, a little very finely blended herb remains in the oil.
You can also let the herb oil drip through a muslin cloth (jelly bag) or a coffee filter to get a completely clear green oil with no bits in it.

Method

  • Rinse the herbs thoroughly and dry them well.
  • Heat the oil to about 60°C.
  • Put the herbs in a blender, discarding the thickest stalks, and pour the oil over them.
  • Blend the oil for about 5 minutes, or until it has turned a deep, dark green.
It takes a little while, but it will get there.
  • Strain the oil through a fine-mesh sieve and pour it into a sterilised (scalded) jar or bottle.
If you want the oil extra fine, you can pour it through a coffee filter or a muslin cloth.
    Store it in the fridge.

  6. Therese

Kan man bruge olivenolie? Bedste hilsener og tak 🙂

  7. Sabine

Hvor længe kan olien holde sig?

    • Hej Sabine

        • Hej Kisten

          Jo for søren da.

          Warm wishes, Dianna
