Pasta salad with green goddess dressing – a beautiful green dish with a wonderful flavour.
I love pasta salads, in summer and winter alike, and this green one is simply delicious.
The pasta is tossed in my green goddess dressing – a dressing made with spinach, basil, spring onions, Parmesan and nuts, among other things. The salad is creamy and substantial, with a pleasing crunch.
Green goddess pasta salad goes beautifully with a summer barbecue, with baked salmon, chicken or pork. Leftovers make a lovely packed lunch with a piece of chicken or some bread on the side.
Green goddess pasta salad with extra greens
If you want to make the salad even greener and crunchier, and cut back a little on the carbohydrates at the same time, you can replace some of the pasta with green pointed (sweetheart) cabbage. It is filling, gives the salad body and adds a really good crunch.
Cut the cabbage finely, into small dice – it tastes so good.

- Put the pasta, cucumber, peas, beans and spring onions in a bowl, pour over the dressing and toss well.
- Serve with a few chopped fresh herbs scattered on top.
Er det saltede eller “ferske” cashewnødder.?
