Creamy potato salad with green goddess dressing. A striking green version, with the loveliest flavour.
The potato salad is a natural fit for summer barbecues, a roast chicken, baked salmon or a stuffed pork tenderloin. It goes with most things and tastes wonderful.
The dressing is made with fresh spinach, basil, cashew nuts and avocado, among other things. It has a pesto-like flavour, but milder and creamier. Blend the dressing and adjust the consistency with water, or add more lemon. The dressing should be soft and creamy – not too runny, but not too thick either.
The potato salad can be served straight away or chilled and served later in the day.
