Thai Red Curry Soup with Minced Beef

Take your taste buds on a culinary journey to Thailand with this heartwarming red curry soup. It brings together the best of Thai cooking – rich, creamy coconut milk, juicy minced beef and fresh, crisp vegetables. Everything is tied together by the flavours of red curry, ginger, garlic and fresh lime, giving a perfect balance of sweetness, sharpness and umami from the fish sauce.

The noodles make this soup a filling meal, equally good on a weeknight or when you want to treat yourself and those closest to you to something a little special. Topped with crunchy peanuts, fresh spring onions and – for those who like it – aromatic coriander, every spoonful offers a new discovery of flavours and textures.
