Whipped ricotta toast is the perfect combination of creamy, tangy and sweet – and it is very easy to make.
The ricotta is whipped in a mini chopper with a pinch of salt until it turns soft and creamy. Whipping it takes away its slightly grainy texture and leaves it silky smooth.
Serve the ricotta on toasted bread, which you can fry in a little oil in a pan, toast in the toaster or put in the oven alongside the roasted tomatoes.
The sweet tomatoes are roasted with thyme, which gives a lovely aroma, and the toast is finished with a tangy lemon and thyme honey that adds a wonderful flavour.
This toast is perfect for a light lunch, a leisurely breakfast or a snack. It is simple to make, but tastes like something from a gourmet café.
Whipped ricotta toast
Ingredients
Whipped ricotta toast
- 250 g ricotta
- Salt
- 4 slices bread
- Oil for frying
Roasted tomatoes
- 200 g cherry tomatoes
- 1/2 tsp dried thyme
- 3 tbsp olive oil
- Salt and freshly ground pepper
- Fresh thyme optional
Lemon honey
- 3 tbsp honey
- 1 1/2 tbsp freshly squeezed lemon juice
- 5 sprigs fresh thyme, leaves picked
- Salt and freshly ground pepper
Method
Lemon honey
- Mix the ingredients for the tangy honey and season to taste with salt and freshly ground pepper.Set aside.
Roasted tomatoes
- Put the tomatoes, olive oil and thyme in a small ovenproof dish and season with salt and freshly ground pepper.
- Roast them in a preheated oven for about 15 minutes at 200°C, conventional oven (top and bottom heat) – or in an air fryer for about 8-10 minutes at 180°C.
Whipped ricotta toast
- While the tomatoes roast, prepare the whipped ricotta and the crisp slices of toast.
- Toast the bread in a pan with a little oil, in the toaster – or put the slices in the oven alongside the tomatoes.
- Put the ricotta in a mini chopper or similar, season with a pinch of salt and blend until it is soft and creamy. This takes 3-4 minutes, and I recommend scraping down the sides a couple of times along the way.
- Spread the ricotta cream on the toast, top with the roasted tomatoes and their juices – and drizzle with the tangy honey.
- Serve with a little freshly ground pepper on top.
Virkelig lækkert. Vi fik lidt pesto til og det kan anbefales 🙂
