This vegetarian massaman is a wonderful, authentic Thai dish, full of flavour and packed with vegetables.
It is built on a base of coconut milk, stock and kaffir lime leaves, which give it a beautiful balance and a lovely aroma.
The combination of sweet potatoes, regular potatoes and broccoli makes for a hearty, filling meal with plenty of texture and bite. It is also seasoned with garlic and fresh ginger, which give the dish its classic, deep flavour.

Warm wishes, Dianna
