This classic curry soup with prawns is both rich and creamy, with a wonderful combination of carrots, celeriac and curry.
The soup is blended until silky smooth, which gives a lovely balance between richness and freshness.
It is topped with juicy prawns marinated in lemon, salt and pepper, which make a bright contrast to the creamy base.
Serve the curry soup with a spoonful of ice-cold crème fraîche, the marinated prawns and a few fresh herbs – the perfect finishing touch for a cosy dinner, or in smaller portions as a starter for a larger menu. A flavourful, simple dish that always impresses.
