This creamy orzo with bacon and chanterelles is the perfect combination of simplicity and flavour.
The rich finish of white wine and cream strikes a lovely balance between the crisp pieces of bacon and the juicy chanterelles, while a generous amount of parmesan gives the dish its final touch.
It is a quick and easy dish that works just as well for a weeknight as for guests, without you having to spend hours in the kitchen.
Serve it with a little freshly grated parmesan and freshly ground pepper on top – it is guaranteed to go down well at the dinner table.
Creamy orzo with bacon and chanterelles
Ingredients
- 200 g bacon, diced
- 250 g chanterelles
- 25 g butter
- 2 shallots, finely chopped
- 3 cloves garlic, finely chopped
- 150 ml white wine
- 400 g orzo
- 800-900 ml stock – chicken or vegetable
- 100 ml cream
- 80 g parmesan, finely grated
- 2-3 tbsp chives, finely chopped
- Salt and freshly ground pepper
- Oil
Method
- Heat a frying pan, with a little oil if needed, and fry the bacon until crisp and golden. Set it aside on a plate.
- In the same pan, add the butter and fry the chanterelles until golden. Set them aside.
- Fry the shallots and garlic until the shallots are translucent, adding a little oil if needed. Season with freshly ground pepper.
- Pour in the white wine and let it reduce for a couple of minutes, then add the orzo and most of the stock. Hold back a couple of hundred millilitres – and adjust the consistency as you go.
- When the orzo is almost cooked, stir in the bacon, chanterelles and cream.
- Stir in the parmesan until it melts, season to taste with salt and freshly ground pepper, and finally fold in the finely chopped chives.
Endnu engang tak for den skønneste feedback 🙂
Warm wishes, Dianna
Endnu en fantastisk ret med Orzo
Tusind tak Charlotte, det er jeg så glad for at høre:)
