Stir-fry with chicken mince and teriyaki

Stir-fry with chicken mince, teriyaki and vegetables.

This stir-fry is a perfect answer to easy, healthy and flavourful weeknight cooking – packed with protein, plenty of vegetables and an Asian twist.
It is made with chicken mince, which is browned well in a pan before you add onion, garlic and fresh ginger – and at least 500 g of crisp vegetables. Use exactly what you have in the fridge – from broccoli and peppers to carrots and sugar snap peas. Stir-fry everything together for just 3-4 minutes so the vegetables keep their bite and colour.

Finally, everything is tossed in a flavourful stir-fry sauce made with teriyaki, among other things, which brings the dish together and gives it plenty of umami and depth. It is a dish that fills you up, is very quick to make – and can be varied endlessly.
Serve with steaming rice, noodles, or try a lighter alternative such as courgetti or cauliflower rice.

Method

  • Cut all the vegetables into bite-sized pieces. They will be flash-fried, so if you use hard vegetables such as carrots, cut them into fine batons or thin slices.
  • Mix the ingredients for the stir-fry sauce – teriyaki, soy sauce, sesame oil and cornflour – and stir well. Make sure all the lumps of cornflour are stirred out.
  • Heat a pan with a splash of oil and brown the chicken well. Season with freshly ground pepper.
  • Add the onion, garlic, ginger and your vegetables, and stir-fry briskly over a high heat for about 2-3 minutes. They should stay nice and crisp.
  • Pour over the stir-fry sauce and toss well with the meat and vegetables. Add a handful of fresh basil leaves if you like, and season to taste with salt (or soy sauce) and freshly ground pepper.
  • Serve with rice, noodles or, for example, courgetti.

    Smager helt fantastisk

      Warm wishes, Dianna

  3. Camilla

    Kan man bruge hakket oksekød?

    • Hej Joan

      Dejligt at høre:)

      Warm wishes, Dianna

  5. Helle Dorthe

kan man bruge Østerssovs i stedet for teriyaki?

  6. Hvad gør du for at piske klumperne ud af sovsen? Jeg havde store problemer med det sidst

    • Hej Linda

      Warm wishes, Dianna
