The best pasta salad, – a warm pasta salad with crisp vegetables, sun-dried tomatoes and parmesan.
Warm pasta salad is a perfect side dish for roast chicken, pork tenderloin or a summer barbecue, for example. The pasta salad can also be served on its own, for lunch or dinner with a slice of bread, or with some leftover chicken, salmon or similar.
Warm pasta salad makes a lovely change from the usual cold pasta salad we all know, – I love putting it on the table as a side dish, and my guests are mad about it.
This warm pasta salad is packed with flavour from garlic, sun-dried tomatoes, basil and parsley, among other things, – it really is delicious.
You can swap the vegetables for whatever you have to hand, – for a warm pasta salad I can recommend aubergine, green asparagus, green pepper, broccoli or Tenderstem broccoli. Sugar snap peas are also really good in a warm pasta salad, – and a handful of cherry tomatoes works beautifully in it too.
Warm pasta salad with vegetables
Ingredients
Warm pasta salad
- 250 g pasta (uncooked weight)
- 200 g chestnut mushrooms, sliced
- 150 g fine green beans (haricots verts), fresh or frozen
- 1 red pepper, sliced
- 1 onion, sliced
- 1/2 courgette, sliced
- 2 handfuls rocket
- 25 g parmesan, finely grated
- Oil
- Salt and pepper
Marinade
- 80 g sun-dried tomatoes
- 50 ml oil from the sun-dried tomatoes
- 2 cloves garlic
- 1 handful basil leaves, about 5 sprigs – chopped
- 1 handful parsley, finely chopped
- Salt and pepper
Method
- Cook the pasta according to the packet instructions, then rinse it in plenty of cold water until it has cooled completely, – leave it to drain in a sieve.*You can also happily use leftover cooked pasta if you have some.
- Meanwhile, mix the ingredients for the marinade, – oil, basil, parsley, garlic and sun-dried tomatoes, – season with salt and pepper and set aside.
- Pour boiling water over the green beans and leave them to stand for 3-4 minutes, – then drain them well.
- Heat a little oil in a frying pan and fry the sliced mushrooms over a high heat. They should be nicely browned and have released all their liquid.
- Add the onions and fry for a couple of minutes, then add the green beans, courgette, red pepper and half of the marinade.
- Fry everything together for about 4-5 minutes, – and season with a little salt and pepper.
- Add the pasta along with the parmesan and the rest of the marinade. Toss well to combine.
- Fold the rocket into the pasta salad, season with salt and pepper, and serve the salad warm
