Pan-fried pointed cabbage with scrambled eggs – a healthy breakfast ready in under 10 minutes.
Pan-fried pointed cabbage (also sold as sweetheart or hispi cabbage) with scrambled eggs is an easy, healthy and genuinely delicious dish you can make in under 10 minutes. It makes a satisfying breakfast that calls for just a few ingredients but delivers plenty of flavour.
The eggs are whisked with a splash of milk and cooked quickly in the pan until soft and creamy. Once they are done, the cabbage goes into the same pan and is fried until it has only just wilted but still has plenty of bite.
Season it with salt, freshly ground pepper and, if you like, a little nutmeg or chilli for a touch of extra warmth.
Finally, fold the eggs and cabbage together and top with fresh chives – ideally with a slice of good bread on the side.
It is healthy, filling and packed with both protein and fibre – and it takes almost no time to make.
A vegetarian breakfast
This combination of pan-fried pointed cabbage and scrambled eggs is an obvious choice for an easy, nourishing vegetarian breakfast. It keeps you full for a long time without feeling heavy, and it is easy to vary with more vegetables – spinach, courgette or a little green pepper, for example.
Serve it as it is, or with a slice of wholemeal bread for extra energy. A quick, simple and nourishing start to the day.
Pan-fried pointed cabbage with scrambled eggs
Ingredients
- 4 eggs
- 50 ml milk
- 1/2 pointed cabbage, roughly shredded
- Freshly grated nutmeg
- Salt and freshly ground pepper
- Oil
- Chives, to serve
Method
- Whisk the eggs and milk together and season with salt.
- Heat a frying pan over a medium heat, add a little oil and cook the eggs until they have just set but are still creamy.Do not stir the eggs too much. Let the base set, then push the eggs in towards the centre so you get large, soft folds. Turn once, then set the scrambled eggs aside on a plate.
- Add a little more oil to the same pan and quickly fry the cabbage – it should only just wilt and keep plenty of bite. Season with nutmeg, salt and freshly ground pepper.
- Return the eggs to the pan. Break the pieces up if they are very large, and quickly fold everything together with the cabbage.
- Serve with chopped chives and, if you like, a slice of bread on the side.
Warm wishes, Dianna
