An easy, flavourful green bean salad
This green bean salad is proof that the simplest things are often the most wonderful! Fresh, crisp-tender fine green beans (haricots verts) are paired with a warm butter dressing of garlic, Parmesan and a touch of chilli – a combination that delivers plenty of flavour and umami depth without demanding more than 10-15 minutes of your time in the kitchen.
A lovely green bean salad – perfect for entertaining, barbecues or simply as an extra-special side on a weeknight
A green bean salad packed with flavour – a haricots verts salad that always goes down well
If you are looking for a green bean salad with real flavour, this recipe is a winner. It is made with classic haricots verts, which keep their crunch and colour and are really lifted by the warm Parmesan and garlic dressing. It is a green bean salad that pairs easily with meat or fish, or can even be served as a vegetarian dish in its own right alongside other sides.
You can also serve it as part of a summer spread or a picnic, where it makes a fresh and slightly different alternative to, say, potato salad or coleslaw. It is a salad that surprises people – and guests often ask me for the recipe.
Green Bean Salad with Garlic and Parmesan
Ingredients
- 400 g fine green beans (haricots verts), preferably fresh
- 60 g butter
- 3-4 cloves garlic, grated or finely chopped
- 1/2-1 tsp chilli flakes
- 1/2 lemon, finely grated zest
- 20 g Parmesan, finely grated
- 1 handful parsley, finely chopped
- Salt and freshly ground pepper
- Chopped parsley, to serve
Method
- Top and tail the beans and cook them in a pan of salted water until done to your liking. I prefer them with a little bite, but cook them the way you like them.
- Meanwhile, melt the butter in a small saucepan over a low heat and fry the garlic and chilli flakes for a couple of minutes – without letting them brown.
- Add the lemon zest and season with freshly ground pepper.
- Take the butter off the heat and stir in first the Parmesan, then the parsley.
- Drain the beans well and arrange them on a plate.
- Pour the Parmesan butter sauce over the beans and sprinkle with a little finely chopped parsley before serving.
