Overnight oats with blueberry compote and vanilla – an easy make-ahead porridge with vanilla and blueberries.
Overnight oats with blueberries and vanilla – a creamy, fresh and truly delicious make-ahead porridge that fills you up and is a treat for the eyes as well as the taste buds.
The oats are quick to stir together the day before and left to thicken in the fridge overnight, so you wake up to a breakfast that is ready to eat. They can also be made in a couple of hours, but I definitely think they are best when given plenty of time to soak.
Here they are made with blended blueberries, which give both plenty of flavour and the most beautiful purple colour. I recommend using frozen blueberries, briefly brought to the boil and then mashed or blended – this gives a far more intense colour and flavour than fresh berries.
The blueberries are stirred together with porridge oats, chia seeds, vanilla, a little honey, milk and vanilla skyr (thick Icelandic-style yoghurt), which makes the oats extra creamy and rich. You can also use plain yoghurt and adjust with extra vanilla yourself.
Serve with extra vanilla skyr, a little of the blueberry compote and a sprinkling of granola on top – and you have an easy, healthy and truly delicious breakfast that keeps you full for hours.
The oats keep well in the fridge for 3-5 days.
Overnight oats with blueberries and vanilla
Ingredients
- 200 g frozen blueberries
- 250 ml porridge oats
- 2 tbsp chia seeds
- 1 1/2 tsp vanilla sugar
- 1 pinch salt
- 1 tbsp honey or syrup
- 200 ml milk
- 150 ml vanilla skyr or yoghurt*
Toppings
- Fresh blueberries
- Vanilla skyr
- Granola
Method
- Tip the frozen blueberries into a saucepan and bring to the boil. Mash them with a fork – or blend them lightly with a stick blender.Put in the fridge and leave to cool.
- Put the porridge oats, chia seeds, vanilla sugar, salt, honey, milk and skyr in a bowl along with 140 g of the blueberry compote – save the rest for topping.
- Stir well, cover with a lid and chill for at least 2-3 hours, preferably overnight. You can also mix the ingredients in 2-3 serving jars with lids. Make sure there is enough room for the toppings when serving. That makes it easy to take with you on the go, or simply grab a jar in the morning or for a quick lunch.
- Stir the oats before serving. Adjust the consistency with a little more milk or yoghurt if you find they have become too firm.*If you have used plain yoghurt, you can also add extra vanilla sugar to taste.
- Top the oats with extra vanilla skyr, blueberry compote and a generous sprinkling of granola or other crunchy topping.
Hvad er en portion i gram?
Hej Tilde
Warm wishes, Dianna
