Apple doughnuts – Easy apple rings with puff pastry.
Apple doughnuts with puff pastry – crisp apple rings with a soft apple centre, flaky puff pastry and a sprinkle of pearl sugar. A very easy and genuinely delicious little dessert or sweet snack that needs only a handful of ingredients. It is almost hard to believe that something so simple can taste so good.
These apple doughnuts are made from fresh apples cut into rings, with the centre removed so they take on the classic doughnut shape. I then wrap strips of puff pastry around the apple rings, brush them with beaten egg and sprinkle them with pearl sugar before baking them in the oven. It really is that simple.
When the apple rings come out of the oven, the puff pastry is golden and crisp, while the apples inside have turned soft and tender. The combination of warm apple and crisp puff pastry is simply wonderful.
I often serve them with vanilla skyr, because it is nearly always something I have in the fridge. The cold, creamy skyr goes beautifully with the warm apple rings, and it makes a lovely little sweet treat or a cosy afternoon bite if you just have one.
If you are serving them as a dessert, I would allow two apple doughnuts per person and serve them with a good dollop of crème fraîche or a scoop of vanilla ice cream. The combination of warm, crisp puff pastry and a cold, creamy accompaniment is especially good.
Apple doughnuts with puff pastry taste best when they are completely fresh from the oven. That is when the puff pastry is still perfectly crisp and the apples are warm and soft. They can certainly be eaten cold or at room temperature, but the puff pastry will gradually lose some of its crispness. So I would definitely recommend serving them warm if you can.
A really easy recipe for apple rings with puff pastry that is both fun to make and a pleasure to eat. Perfect as a quick dessert, a sweet afternoon snack or simply when you have a couple of apples lying around and fancy something a little special.
Apple Doughnuts – Apple Rings in Puff Pastry
Ingredients
- 2 apples – not too small
- 1 roll ready-rolled puff pastry
- Beaten egg, for brushing
- Pearl sugar (nib sugar)
Serving suggestions
- Vanilla skyr
- Crème fraîche
- Vanilla ice cream
Method
- Cut each apple into 4 slices, just under a centimetre thick.
- Cut out the centre of each slice with a round cutter about 3 cm in diameter. If the hole is too small, you will find it hard to wrap the puff pastry around the rings at the end.
- Cut the puff pastry into 16 strips across the width of the sheet, so each strip is as long as the short side.
- Wrap the strips around the apple rings – you need two for each ring. Try to keep the joins underneath the ring, and both on the same side, for the neatest finish.
- Place them on a baking tray lined with baking paper, brush with beaten egg and sprinkle with a little pearl sugar.
- Bake in a preheated conventional oven (top and bottom heat) at 200°C for about 14-16 minutes – then leave them to rest on the baking tray for about 5 minutes before serving with vanilla skyr, crème fraîche or vanilla ice cream, for example.
- They taste best freshly baked, while the puff pastry is still crisp – but they can also be served cold.
