I love cheesecake, and I love experimenting with new flavours and toppings. I made this one day when we had guests over, and it was a huge hit. It has a really good balance of tartness and sweetness, and it hides a layer of apple and sea buckthorn compote in the centre.
Although there are quite a few ingredients and steps in this recipe, this cheesecake is very straightforward to make, and it is almost impossible to get wrong.
