Time for a round of brændende kærlighed – Danish “burning love”, fluffy mashed potatoes topped with crispy bacon and onions – made, in fact, at the request of the eldest princess, who really loves bacon.
Bacon is the main ingredient, so buy a proper piece of bacon, from the butcher for instance – it undeniably tastes better than what you get in the supermarkets. Alternatively, it is easy to make yourself – see the recipe for homemade bacon. The pieces shouldn’t be too small; they should have a bit of bite to them.
We had some beetroot jam left over from when we made these æbleskiver (Danish pancake balls), and it certainly didn’t make the dish any less delicious. I can say with certainty that it won’t be long before we have it again.
