I love a classic shepherd’s pie; it tastes wonderful, and something happens to the flavour when the dish goes into the oven and the top turns golden.
If lamb isn’t for you, you can make a classic cottage pie with minced beef instead, – the method and the principle are the same – it is simply made with beef.
