Danish strawberry compote (jordbærgrød), – a recipe for old-fashioned strawberry compote just as you remember it from childhood. It tastes and smells of summer and childhood memories, – and topped with a splash of cream it is like a taste of Danish summer (when the sun is at its very brightest;-))
Strawberry compote is a classic I remember from when I was very small; my mother has always made it, – and I love it. It can be served the classic way with cream, – but it is also wonderful as a topping on a bowl of yoghurt, overnight oats or all manner of desserts. Try it with a scoop of vanilla ice cream on top too, and perhaps a little crumble of some kind, – mmmm.
Strawberry compote with frozen or fresh strawberries
I always use a combination when I make strawberry compote, – that is how I think it tastes best.
I cook the compote with frozen berries, and once it is done I blend it lightly so there are not too many large whole berries left, and then I fold small dice of fresh strawberries into the compote. It gives the compote a wonderful freshness and a lovely texture, – just the way I prefer it.
If you have plenty of strawberries in the garden you can make the compote with fresh strawberries, but I would still recommend adding the diced fresh strawberries at the end 🙂
Danish strawberry compote (jordbærgrød)
Ingredients
- 800 g strawberries – preferably frozen
- 200 g fresh strawberries (optional)
- 100 g sugar
- 200 ml water
- 1 vanilla pod
- 4 tsp cornflour
Method
- Scrape the seeds out of the vanilla pod and mash them with a little of the sugar so they separate.
- Put the frozen strawberries, sugar, water, vanilla seeds and the empty vanilla pod in a saucepan and bring to the boil.
- Turn down to medium heat and let the compote simmer for about 5-6 minutes, – or until the berries are just tender.*If using fresh strawberries, the cooking time is shorter.
- Stir the cornflour into a couple of tablespoons of cold water and pour it into the compote, stirring as you go. Let the compote cook for a further 5 minutes or so over medium heat, – or until the berries are completely tender.
- Take the pan off the heat (remove the vanilla pod first) and blend the compote lightly with a stick blender.*You can skip this step if you prefer the compote with lots of whole berries, – at home we prefer it lightly puréed.
- Cut the fresh strawberries into small dice and stir them into the hot compote.*The fresh strawberries give the compote a lovely freshness and a really pleasant texture, as they are barely heated through.
- Put the compote in the fridge and let it chill completely before serving.

Dbh Dianna
