Crisp filo parcels with baked feta and freshly ground pepper, cooked in the air fryer.
Baked feta served with fresh salad leaves, tomatoes, pesto and pine nuts – fresh and full of flavour.
Perfect as a light lunch, starter or appetiser.
Feta baked in filo pastry is a simple, delicious taste of beautiful Greece. These filo parcels are quick, easy and energy-efficient to cook in your air fryer.
Layer upon layer of crisp filo wrapped around soft, baked feta, mmmmm.
In the recipe I allow 1 filo parcel with 1/2 block of feta per person, – with plenty of green salad on the side, but if you are very hungry, or serving the dish as a main course, I would recommend 2 filo parcels per person.
If serving them as an appetiser, I would recommend cutting the feta into 4 rather than 2 as described in the recipe, – do the same with the filo pastry, – but only halve it, so you don’t end up with too many layers.
If you don’t have an air fryer, – you’ll find the recipe for feta baked in filo pastry in the oven right here – click here.
Baked feta in filo pastry – cooked in the air fryer
Ingredients
Baked feta in filo pastry
- 2 blocks of feta, 175-200 g each
- 4 sheets fresh filo pastry *or frozen – see the note in the method
- Freshly ground black pepper
- Olive oil
To serve
- 4-8 handfuls mixed salad leaves
- 4-6 large tomatoes, sliced
- 8 tbsp pesto
- 1 handful pine nuts, toasted in a dry frying pan
- Freshly ground black pepper
Method
- Halve the blocks of feta and set them aside on a chopping board.
- Drizzle a little oil over a sheet of filo and spread it out with your hands. Fold it in half lengthways, – so you have a narrower, elongated strip. The oiled sides should be folded against each other so they stick together.*If you are using frozen filo in small square sheets, I recommend layering 3-4 sheets on top of each other, brushed with a little oil between each layer. Wrap the feta in this and place it seam-side down on a baking tray lined with baking paper. The 3-4 layers are important so the pastry doesn’t split as it bakes.
- Drizzle a little oil over the folded strip as well and spread it out with your hands.
- Place a piece of feta at one end and season with a little freshly ground pepper.
- Fold the pastry over to cover the cheese, then fold the sides in over it, and continue rolling the filo around the rest of the feta.Continue until all 4 pieces are wrapped.*See the video above the recipe, – there I show how to fold them using fresh filo pastry.
- Brush the outside of the filo parcels with oil and place them in your air fryer.
- Set the air fryer to 180°C and cook the filo parcels for about 15-18 minutes.
- Let them cool for a moment before serving with a couple of handfuls of salad leaves, tomatoes, pesto and pine nuts.

Warm wishes, Dianna
