An easy, healthier tuna salad made with cottage cheese – satisfyingly filling, with a mild, creamy flavour.
In my tuna salad with cottage cheese I have added a finely chopped stick of celery; it gives the tuna salad a real freshness and a pleasant crunch.
Tuna salad with cottage cheese is wonderful on a slice of Danish rye bread (rugbrød), ideally toasted, in a sandwich or as the protein in a main-course salad with, for example, wholegrain pasta, crisp salad leaves and vegetables.
When serving, top it with fresh cucumber, fresh tomatoes or thin batons of carrot – the perfect sandwich filling for lunch or an easy dinner.
Tuna salad with cottage cheese
Ingredients
- 2 tins tuna, drained
- 250 g cottage cheese
- 3 tbsp mayonnaise
- 1 stick celery, finely chopped (optional)
- 1/2 small red onion, finely chopped
- 1/2 lemon, juice of
- 3 tbsp chives, finely chopped
- 1 tbsp capers, finely chopped – can be replaced with pickled gherkin
- 1 tsp Dijon mustard
- Salt and pepper
Method
- Put the tuna, cottage cheese, mayonnaise, Dijon mustard, chives, red onion, capers and celery in a bowl and stir well to combine. If you are not keen on celery you can easily leave it out, but it gives the tuna salad a lovely flavour and crunch. You can also leave out the capers, or replace them with finely chopped pickled gherkin.
- Season to taste with lemon juice, salt and pepper, and keep the tuna salad in the fridge until it is to be served.Personally I think it tastes best when fairly freshly made, so I only make enough for 1 day at a time.
