An easy, satisfying one-pot tortellini with salsiccia, tomatoes and cream.
We love tortellini in our house – it tastes wonderful and takes no time at all to cook. So it had to be tried in a one-pot pasta too, and it worked beautifully.
This one-pot tortellini with salsiccia (fresh Italian pork sausage) also has plenty of garlic, a generous amount of parmesan, a splash of white wine and, on top of that, a handful of tenderstem broccoli florets or diced courgette. Use whichever you prefer, and swap the wine for stock if you like.
Serve with plenty of freshly ground pepper on top and a sprinkling of parmesan, if you like.
One-pot tortellini with salsiccia, tomatoes and cream
Ingredients
- 500 g tortellini
- 250 g salsiccia fresh Italian pork sausage
- 250 g cherry tomatoes, halved if you like
- 150 g courgette, diced, or tenderstem broccoli, cut into florets
- 1 onion, roughly chopped
- 4 cloves garlic, grated or crushed
- 2 handfuls fresh spinach
- 1 handful basil leaves
- 75 g parmesan, finely grated
- 250 ml cream whipping cream (38% fat) or double cream
- 150 ml white wine (or stock)
- 150 ml stock or water
- 50 g sun-dried tomatoes (optional)
- Salt and pepper
Method
- Heat a deep frying pan or a saucepan over fairly high heat – squeeze the sausage meat out of the casings into the pan and fry it well, breaking it up, for about 5 minutes.*The sausages usually contain plenty of fat, so you can leave out the oil – otherwise add a little oil if needed.
- Add the onion and garlic and fry for a couple of minutes more.
- Season with pepper, add the cherry tomatoes and sun-dried tomatoes and fry for another 3-4 minutes.
- Pour in the white wine and let it reduce, then add the cream and parmesan – and let the sauce simmer over medium heat for about 10 minutes.
- Add the tortellini, fresh basil and the water or stock – and let it cook until the tortellini are done according to the packet instructions. It usually takes a little longer than stated, as not all the tortellini are covered by liquid – so stir the dish as it cooks.
- Finally, stir the spinach and the tenderstem broccoli or courgette through the dish, heat through for a couple of minutes and season to taste with salt and pepper.*You can also fry the tenderstem broccoli or courgette along with the tomatoes – but personally I think it is rather nice when they keep some bite.

Nem og lækker opskrift! Lavede den uden salsiccia, og tilføjede lidt ekstra asparges broccoli og soltørrede tomater i stedet – og det smagte vidunderligt Tak for inspirationen!
