An easy, refreshing melon salad, a true summer salad with 3 kinds of melon, strawberries, mango and avocado, – plenty of fresh basil and lime.
Melon salad is so quick to throw together, and it goes perfectly with summer barbecues, – ideally alongside lighter meats such as chicken and pork. This melon salad also makes a perfect lunch salad on a hot summer’s day when your appetite may be flagging a little.
You can serve the melon salad as it is, or top it with crumbled feta and/or toasted pine nuts, – both go beautifully with the melon salad.
I used 3 kinds of melon in my melon salad, but 2 will do just fine, – use the ones you prefer.
Melon salad with strawberries, mango and avocado
Ingredients
- 700 g melon, cut into cubes – I used 3 kinds
- 250 g strawberries, sliced
- 1 mango, cut into cubes
- 1 large avocado, cut into cubes
- 3 spring onions, finely sliced
- 1 pot basil, leaves only
- 1-2 limes, juice and finely grated zest
- 2 tbsp olive oil
- Freshly ground pepper
- Optional: feta and/or toasted pine nuts, to serve
Method
- Mix the melon, strawberries, mango, spring onions and basil well together in a bowl.I used watermelon, cantaloupe and honeydew melon, – but use the ones you prefer or can get hold of. 2 kinds is also plenty.
- Drizzle with a tablespoon of the oil and the juice of a single lime, and season with freshly ground pepper.
- Tip the melon salad into a serving bowl, top with the avocado cubes, – then taste and decide whether you want more lime juice over it. Whether you need 1 or 2 depends entirely on how juicy your limes are.
- Drizzle the remaining oil over the top of the salad, and scatter the finely grated lime zest over the top.
- Serve the salad with a little extra freshly ground pepper on top, and if you like, a bowl of crumbled feta or toasted pine nuts on the side, or sprinkled over the salad.
