Serrano ham sandwiches with fresh mozzarella, tomatoes and pesto, with plenty of rocket and fresh basil.
A serrano sandwich like this takes hardly any time to make. Warm the rolls and fill your sandwiches – easy, isn’t it?
You can make your own pesto – I link to my own favourite in the recipe – or you can use a shop-bought one. I would always recommend homemade; it simply tastes best. If you do buy it, go for the “fresh” kind from the chilled section; it tastes far better than the jars on the shelf.
Personally I prefer a good serrano, but if you are more of a Parma ham person, that works just as well.
