Gooey, indulgent Mexican Mac & Cheese made with vegetables and beans.
It’s filling, it’s comforting, and it’s incredibly easy to make.
Use a frying pan that can go in the oven if you have one – it saves on unnecessary washing-up, and whatever little there is can be done while the dish is in the oven.
Mexican Mac and Cheese can be topped with crème fraîche when serving; it makes a lovely contrast to the mildly spicy dish – and you can of course add more jalapeños if you want more heat.
Mac & Cheese
Mac and Cheese is a pasta dish made with a roux-based milk sauce and generous amounts of cheese. The cheeses can vary according to taste, but cheddar is usually one of them.
That’s why Mac & Cheese also lends itself perfectly to a Mexican version – together with Mexican spices, vegetables and beans it becomes a wonderfully rich, gooey and comforting pasta dish.

Mexican Mac and Cheese
Ingredients
- 50 g butter
- 1 onion, roughly chopped
- 3 cloves garlic, grated or crushed
- 3 tbsp taco seasoning or Mexican spice mix – click here
- 10 slices pickled jalapeños, finely chopped
- 3 tbsp tomato purée
- 3 tbsp plain flour
- 700 ml milk
- 400 g pasta
- 200 g cheddar, grated
- 100 g grated mozzarella
- 2 peppers, cut into small dice
- 1 tin kidney beans
- Oil
- Salt and freshly ground pepper
To serve
- Crème fraîche
- Fresh parsley or coriander
- Crushed tortilla chips, optional
Method
- Melt the butter with a little oil in a large frying pan and fry the onion and garlic until translucent.*It’s a good idea to use a pan that can go in the oven, as the dish goes into the oven for 15 minutes before serving.
- Add the taco seasoning, jalapeños and tomato purée and heat through for a couple of minutes.
- Sprinkle the flour over and stir it in well, then add the milk while stirring thoroughly.
- Let the sauce simmer for 5-10 minutes. Remember to stir the sauce regularly so it doesn’t catch on the bottom. Season to taste with salt and freshly ground pepper.Meanwhile, cook the pasta until al dente.
- When the pasta is almost done, stir the cheese into the sauce. Keep back a good handful – about 100 g – for sprinkling on top.
- Add the peppers and beans to the sauce and stir well.
- Drain the pasta and fold it into the sauce. Adjust the consistency with a splash of the pasta water if it seems too thick.*If your pan is ovenproof, leave the dish in it – otherwise transfer it to an ovenproof dish.
- Scatter the remaining cheese over the top and bake in a preheated conventional oven (top and bottom heat) at 230°C for about 10-15 minutes, until golden and bubbling.
- Let the dish rest for 10 minutes before serving, then top with finely chopped parsley, fresh jalapeños or similar.Serve with ice-cold crème fraîche.

Much appreciated it.

Hej Athena
