Nem jordbæris uden ismaskine – Sommerens bedste is med jordbær

Easy no-churn strawberry ice cream

Easy strawberry ice cream without an ice cream maker – with plenty of fresh strawberries.

Here is my recipe for the easiest and most delicious strawberry ice cream – and the best part is that you don’t need an ice cream maker!
This creamy strawberry ice cream is made with just 5 ingredients and a full 500 g of strawberries, which are cooked down into a sweet, intense strawberry purée with vanilla. The purée is folded into a light, airy base of whipped cream and condensed milk – and just like that, you have a homemade ice cream that tastes like a spoonful of Danish summer.

My husband and the girls were completely won over – they declared it the best strawberry ice cream they had ever tasted. And I can see why. All those strawberries really make a difference, and the flavour brings back memories of sunshine, summer and childhood.

Serving suggestions:
– Serve in cones or crisp wafer cups with extra fresh strawberries and mint
– Top with a little melted white chocolate or a homemade strawberry syrup
– Make ice cream sandwiches with small vanilla biscuits
– Use scoops of the ice cream in a strawberry milkshake or alongside a rhubarb tart

Method

  • Put the strawberries, sugar and vanilla seeds, along with the empty vanilla pod, in a saucepan and bring to the boil. Let the strawberries simmer until completely soft – about 10 minutes.
  • Remove the vanilla pod and blend the strawberries to a smooth purée, then put it in the fridge to cool completely.
You can also put it in the freezer to speed up the cooling.
  • Meanwhile, whip the cream and condensed milk together until thick, creamy and airy.
  • Once the strawberry purée is completely cold, fold it into the cream mixture and stir until well combined. Set aside a little purée for the top, if you like.
  • Pour the ice cream mixture into a container, top with a little strawberry purée and freeze-dried strawberries if you like, and freeze for at least 4 hours.
Take the strawberry ice cream out of the freezer 10-15 minutes before serving.
