These pork gyros skewers are a tribute to authentic Greek flavours. The pork is cut into thin strips and tossed in a marinade of yoghurt and homemade gyros seasoning, which keeps it juicy and full of flavour.
Meat and fresh vegetables such as pepper and onion are threaded alternately onto skewers, ready to be cooked – in the oven, on the barbecue or in a frying pan, whichever you prefer.
Serve your gyros skewers with a fresh salad and a creamy tzatziki, alongside crushed potatoes or warm pita or flatbreads. A simple but wonderfully flavourful dish that brings a taste of the Mediterranean into your own kitchen.
These gyros skewers work just as well on a weeknight as at the weekend, and they are easy to adapt with different sides and ways of serving.
Gyros with marinated pork and vegetables
Ingredients
- 1 pork tenderloin
- 4 tbsp Greek yoghurt
- 3 tbsp gyros seasoning – click here for the recipe
- 2 onions, cut into wedges
- 1 green pepper, cut into large chunks
- Oil
- Salt and freshly ground pepper
Method
- Trim the tenderloin of any sinew and silver skin, and cut the meat into long, thin slices/strips.
- Mix the yoghurt with the gyros seasoning, season with salt and freshly ground pepper and add a little oil. Stir well and turn the meat in the marinade until coated.
- Toss the vegetables with a little oil and season with salt and freshly ground pepper.
- Fold the strips of meat back and forth in a ribbon and thread them onto 4 skewers, alternating with the vegetables. Gently spread everything out so the meat is not packed too tightly. If you use wooden skewers, soak them in water for about 20 minutes first so they don’t burn during cooking.
- Cook the skewers in a preheated conventional oven (top and bottom heat) at 215°C for about 12-15 minutes. It helps to rest the skewers on a foil tray or similar, so they are lifted off the baking tray.If they are cooked through but lack a little colour, you can brown the sides with a kitchen blowtorch. You can of course also cook the skewers on the barbecue, or fry them in a little oil until golden and cooked through.

Hej Susanne
Ja det kan du sagtens gøre:) En frisk salat til med en cremet base vil være virkelig lækkert sammen med også f.eks. en af disse 3 første: https://gourministeriet.dk/?s=Cremet+agurkesalat
