Do you love Mexican flavours and easy dishes? Then you need to try these little Mexican meatloaves in puff pastry. They are filled with juicy, spiced beef, melted cheddar and a touch of jalapeños for a bit of extra kick.
The puff pastry wraps everything up neatly and bakes golden and crisp in the oven – an irresistible combination of flavour and texture.
I use a good mature cheddar to give the flavour extra depth, but you can easily use a milder one if you prefer. The meatloaves are very easy to make – they are cut into small bite-sized pieces, so they work just as well as a main course as they do as part of a tapas spread.
Serving suggestions
Serve them as a main course with a fresh salad, guacamole, salsa and crème fraîche
Lovely with spiced potatoes or grilled corn on the side – and a selection of dips
Brilliant as part of a tapas spread – small crisp bites packed with flavour.
In under 30 minutes you can have these crisp Mexican bites ready – whether you are making them for a relaxed weeknight dinner or as a festive snack for guests. They are, quite simply, too good to miss.
Mexican meatloaf in puff pastry
Ingredients
- 500 g minced beef
- 1 sachet taco seasoning mix – or about 2-3 tbsp homemade
- 3 spring onions, finely sliced
- 100 g cheddar, grated – preferably mature
- 1 egg
- 5 pickled jalapeños, finely chopped
- Salt and freshly ground pepper
For the pastry
- 1 roll ready-rolled puff pastry
- 50 g cheddar, grated – preferably mature
- Beaten egg, for brushing
- Sesame seeds
Method
- Mix the ingredients for the mince filling together in a bowl, and season with salt and freshly ground pepper.
- Unroll the puff pastry and cut it in half across the middle, across its width, so you have two shorter rectangles. Spread the 50 g of cheese down the centre of each piece.
- Divide the mince into two equal portions, and press each one into a sausage shape the same length as the width of the pastry. Lay the meat down the centre of a pastry piece, then shape it so it reaches right out to the edges and is even in thickness. Do this with both pieces.
- Fold the pastry around the meat – this is easiest if you take one edge first and then roll it over the rest of the pastry. Press the seam together lightly with a finger. Do this with both pieces.
- Brush the pastry with beaten egg and sprinkle with sesame seeds, then cut each roll into 5 slices (about 5 cm each).
- Place them on a baking tray lined with baking paper, seam side down, and bake in a preheated oven at 200°C, conventional oven (top and bottom heat), for about 20-24 minutes – or until golden and crisp on top.If the meat releases a lot of liquid, move them around on the baking paper after about 5 minutes so they are not sitting in the juices.
- Let them cool slightly on a wire rack before serving – serving suggestions in the introduction.
Smagte heeelt fantastiske.
Hejsa
Warm wishes, Dianna
Sikke en god ide. Det smagte himmelsk. Tak for opskriften.
Rigtig dejlig dag 🙂
Dbh Dianna
Super lækker!!
Hej Tina
Ihhh hvor kønt at høre 🙂 Tusind tak fordi du giver dig tid til at skrive 🙂
