Avocado salad with tomato and lime – a fresh, colourful summer salad.
This avocado salad is one of those really simple salads that just works – every time. It is packed with colour, flavour and the feel of summer, and it goes with everything from barbecued chicken and salmon to flatbread, or stands on its own as a fresh lunch salad.
The salad is built on plenty of cherry tomatoes – ideally in different colours and cut in slightly different ways for a rustic look – tossed with cubes of ripe avocado, thin slices of red onion and fresh parsley. A quick lift from good olive oil, freshly squeezed lime juice, a little honey and a pinch of chilli flakes, and it is ready!
It can easily be made a little ahead and kept in the fridge until you are ready to serve – and it hits the mark every time. Sharp, sweet, rich, a touch of heat… everything a good salad should be.
When a few ingredients are enough
One of the best things about salads like this is how little you actually need. You don’t need 15 different elements or an elaborate dressing – sometimes it is precisely the simplicity that makes a salad great.
The creamy richness of the avocado, the sweet-sharp tomatoes and the fresh lime strike a perfect balance. Top with a little honey and chilli and the flavours are lifted – without any extra fuss or time.
It is a salad where the quality of the ingredients is allowed to shine through – and that is exactly what makes it so good. Simple, but truly full of flavour.
