When it comes to easy, flavourful side dishes, roasted pointed cabbage (also sold as hispi or sweetheart cabbage) with garlic butter is one of the best choices. It is incredibly simple to make, and the cabbage turns wonderfully tender and buttery, with a rich garlic flavour running through it.
Here the cabbage is paired with homemade garlic and parsley butter, which melts into the leaves as it roasts and adds plenty of depth and aroma. It goes beautifully with barbecued food, roast chicken, baked salmon or a piece of steamed or pan-fried white fish – a versatile side that lifts any meal.
For an extra layer of flavour, top the cabbage with grated Parmesan or Vesterhavsost (a Danish aged hard cheese) before roasting – it gives a lovely salty, creamy crust.
Serving tips
Perfect with: Barbecued food, roast chicken, baked salmon or a good steak.
Extra flavour: Sprinkle grated Parmesan or Vesterhavsost over the cabbage before roasting.
Creamy touch: Top the roasted cabbage with burrata before serving, and finish with finely grated lemon zest and a drizzle of olive oil.
Light and fresh variation: Add a squeeze of lemon juice or some fresh herbs before serving.
