Easy pointed cabbage salad with blueberries and avocado – dates, feta and a vinaigrette.
This pointed cabbage salad is a real favourite of mine. It has everything – crisp, creamy, sweet and salty all in one salad, and it simply works.
Crisp pointed cabbage (also sold as sweetheart or hispi cabbage) forms the base, while avocado brings a lovely creaminess. Sweet blueberries and dates give a beautiful contrast to the salty feta and the crunchy salted almonds – and together with fresh spring onions you get a salad with plenty of both flavour and texture.
Everything is tossed in a simple vinaigrette of lemon, olive oil, a little mayonnaise and mustard, which gives a lightly creamy dressing with both acidity and sweetness. It brings the salad together and lifts all the flavours.
It is a salad that goes perfectly with the summer barbecue – with white or red meat or fish – but it also works really well as a main-course salad, perhaps with a little protein on the side.
It is one of those salads I come back to again and again when I want a bit of everything in one bite – it is filling, tastes wonderful and is simply very, very good.
What makes this salad so good
Pointed cabbage – The crisp base of the salad. It gives plenty of crunch and freshness – and soaks up the dressing really well at the same time.
Avocado – Adds a soft, creamy texture that balances all the crunch. It makes the salad more filling and rounder in flavour.
Blueberries – Give small, sweet and juicy bursts that freshen up the salad and create a lovely contrast to the salty elements.
Dates – Contribute a deeper sweetness that pairs really well with the feta and the vinaigrette.
Feta – The salty, slightly tangy flavour that lifts the whole salad and gives it character.
Spring onions – Add a mild onion flavour and a little bite, which balances the sweet and creamy elements.
Salted almonds – Give a satisfying crunch and extra flavour – and they go really well with both the feta and the sweet elements.
The vinaigrette – The vinaigrette pulls the whole salad together and creates the perfect balance 🤍 The rounded richness of the olive oil, the gentle bite of the mustard and the fresh acidity of the lemon work really well together. The honey adds a mild sweetness, while the mayonnaise gives a light creaminess – and together they lift all the flavours in the salad and bind it all together.
