Solero ice cream with mango and passion fruit – an easy, refreshing ice cream with no ice cream maker needed.
This mango and passion fruit ice cream genuinely tastes of sun and summer. It is fresh, tropical and creamy – and most importantly, it needs no ice cream maker, so anyone can make it.
The ice cream starts with a base of condensed milk and cream, which gives it the softest, smoothest texture. To that you add blended frozen mango, fresh passion fruit, lime and a hint of vanilla – a combination that recalls the classic Solero ice lolly: sweet, tangy, fruity and completely refreshing.
I mix most of the fruit purée straight into the ice cream base, so you get a lovely tropical flavour all the way through. But I also hold a little back and swirl mango and passion fruit through the ice cream itself – it gives you little bursts of fresh fruit along the way that really lift the flavour.
Note: these fruit swirls can crystallise slightly in the freezer – so if you are after a completely smooth ice cream without any icy bits, simply mix all of the fruit purée into the base instead. Both versions work beautifully – it just comes down to the flavour and texture you prefer.
Easy summer ice cream without an ice cream maker, with plenty of Solero flavour
What I love about these no-churn ice cream recipes is how easy they are – no tempering, no stirring and no expensive equipment. Just whip up the cream mixture, blend the fruit and pour it all into a container – the freezer does the rest.
With just a few ingredients – condensed milk, cream and fruit – you get an ice cream every bit as creamy and good as anything from the ice cream parlour. The combination of mango, passion fruit and lime gives it that classic Solero feel – fresh, sweet, tangy and tropical.
This is a perfect summer dessert that you can make well in advance and keep in the freezer – ready to impress guests and family alike. And it simply tastes of holidays, sunshine and cold treats on the terrace

Hej.
Warm wishes, Dianna
Hej Doanna
Warm wishes, Dianna
