Smørrebrød – Danish open-faced rye bread sandwiches – is simply good eating, and no spread of smørrebrød is complete without a kartoffelmad, the classic potato open sandwich. It tastes light and fresh, and it is very easy to make and to dress up a little.
Here we serve our kartoffelmad with a little mayonnaise stirred with lemon zest and homemade crispy fried onions. It doesn’t get much simpler than that.
