Homemade remoulade – the Danish sweet-and-sour, curry-tinged kind – really does taste wonderful, and it is actually quite easy to make. This recipe is built on our homemade pickles (a curried sweet-and-sour vegetable relish, not unlike piccalilli) and a home-whisked mayonnaise.
The homemade pickles make a huge difference. If homemade mayonnaise feels like a stretch, you can happily use a good shop-bought mayonnaise – in that case we prefer Hellmann’s.
The homemade pickles can also be used on plenty of other smørrebrød (open-faced rye bread sandwiches), as an accompaniment to meat and so on, which is why this batch is sized to fill about half a large preserving jar.
