A generous lunch sandwich with creamy chicken salad, crisp salad leaves and crispy bacon. Perfect if you have some leftover chicken to use up – though I make it just as often with freshly pan-fried chicken breasts.
Fill it with a mix of crisp salad leaves of your choice, and try adding slices of fresh apple or pickled red onion too. It tastes SO good.
You can easily cook your bacon in the oven, which saves you all the mess on the hob. You will find the recipe and method via this link – crispy bacon in the oven.
Serve it for lunch or as an easy, satisfying evening meal – I hope you will give the recipe a try.
