This blueberry jam is both easy to make and ready in under 15 minutes, which makes it a perfect choice for a busy weekday or a leisurely weekend morning.
The blueberries are cooked down with vanilla and a touch of lemon, giving the jam a lovely balance between sweetness and freshness.
The jam is wonderful on freshly baked bread, as part of a brunch spread, or as a topping for pancakes and æbleskiver (Danish pancake balls).
With just a few ingredients and a short cooking time, you have a delicious homemade blueberry jam that can be enjoyed in many ways.
Homemade Blueberry Jam with Vanilla and Lemon
Ingredients
- 500 g blueberries
- 300 g jam sugar sugar with added pectin
- 1/2 vanilla pod
- 1/2 lemon
Method
- Put the blueberries, sugar and the juice of 1/2 lemon in a small saucepan.
- Scrape the seeds out of the vanilla pod and add them to the pan – along with the empty pod.
- Bring the contents of the pan to the boil, then let the jam simmer over a medium heat for about 10-14 minutes. The jam will seem thin while it is hot, but it thickens once it goes in the fridge.
- Pour the jam into a sterilised jam jar (rinsed with boiling water) and refrigerate. If you want it to keep for longer, you can also rinse the jar with Atamon (a Danish liquid preservative) first.
god nem opskrift – brugte frosne blåbær, da det kun var det jeg havde – 250 g sukker – og saften af en hel citron – lækkert til æbleskiverne i dag – TAK 😉
