This homemade herb mayonnaise is both quick to make and packed with flavour. You can make it with exactly the herbs you prefer – or better still, a mix of several for the greatest depth of flavour. Try dill, parsley, chives, chervil, tarragon, wild garlic or lovage – the possibilities are many.
The creamy herb mayo is perfect on smørrebrød (open-faced rye bread sandwiches) with plaice fillet, prawns or egg, in a sandwich, or as a dip for crisp fried potatoes. However you use it, it lifts your dishes with its fresh, aromatic flavour.
It also keeps well in the fridge for 3-4 days, so you can make it ahead and have it ready for several meals. An easy way to add a little extra flavour to your favourite dishes.
Homemade herb mayonnaise
Ingredients
- 200 ml neutral-flavoured oil
- 1 large handful herbs, e.g. chives, parsley, tarragon, lovage or similar
- 30 g egg yolks
- 1-2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt
Method
- Rinse the herbs thoroughly and pat them dry.
- Pour the oil into a blender with the herbs and blend on high speed until the oil is completely green.Let it run for a good 4-5 minutes. This warms the oil slightly, so it draws more flavour and colour out of the herbs.
- Put the egg yolks, lemon juice and Dijon mustard in a mini chopper or small blender and blitz briefly to combine. Then add the oil a little at a time, blending continuously, until all the oil has been used and the mayonnaise has thickened.
- Season the mayonnaise with salt and keep it in the fridge until serving – it keeps well for 3-4 days.

Hej Julie
God bedring 🙂
