These tortilla bites with tuna salad are the ultimate finger food – easy to make, a pleasure to eat and perfect for everything from graduation parties, birthdays and picnics to an ordinary summer’s day when you simply fancy a good snack.
The recipe is based on a lighter tuna salad, which is spread onto soft tortilla wraps. They are then topped with crisp lettuce, red pointed cabbage, green pepper and fresh spinach before being rolled up tightly, cut into small pieces and secured with cocktail sticks – turning them into small, inviting bites.
They are:
- Quick and easy to make
- Lighter and healthier than the classic tuna rolls
- Packed with flavour and freshness
- Perfect as a starter, a snack or on the buffet table
Bonus: you can easily make them a few hours ahead – just keep them covered in the fridge and they will stay fresh and neat until the party.
Tortilla bites with tuna salad
Ingredients
- 2 tins tuna drained
- 3 tbsp crème fraîche – ideally low-fat (9%)
- 2 tbsp mayonnaise – ideally light
- 2 spring onions, finely sliced
- 2 tbsp pickled gherkins, finely chopped
- 1 tsp Dijon mustard
- 1/2 lemon, juice only
- Salt and freshly ground pepper
For assembling
- 4 large tortilla wraps
- 1 green pepper, cut into strips
- 1/4 red pointed cabbage, finely shredded
- 4 handfuls spinach
- 4 handfuls fresh lettuce
- Cocktail sticks
Method
- Put the ingredients for the tuna salad in a bowl and stir well. Season to taste with freshly squeezed lemon juice, salt and freshly ground pepper – and add a little more crème fraîche if you think it needs to be slightly creamier.
- Divide the tuna salad between the 4 wraps and spread it out, then top with the pepper, shredded cabbage, spinach and lettuce. Roll the tortillas up tightly and, if you like, wrap them in greaseproof paper so they hold their shape.
- Push cocktail sticks in along the seam where the wrap is joined, and cut each tortilla into 6-8 pieces. Scatter a few fresh herbs or greens over the top before serving, if you like.
