Lun spidskålsalat med pistacie og feta - Salat på 5 minutter

Warm pointed cabbage salad with pistachio and feta

Warm pointed cabbage salad with feta, pistachios and edamame beans.

This warm pointed cabbage salad is a lovely mix of crisp, creamy and fresh – and it genuinely takes only 5 minutes to make.

The pointed cabbage (also sold as hispi or sweetheart cabbage) is coarsely shredded and flash-fried briefly in a little olive oil, so it just wilts slightly and still has plenty of bite. It is spread on a plate and topped with edamame beans (either quickly boiled or simply covered with boiling water), chopped pistachios and crumbled feta. Finally it is drizzled with a little lemon juice, grated lemon zest and perhaps a little extra olive oil – and you finish with freshly ground pepper and, if you like, some flat-leaf parsley for colour, flavour and finish.

The salad is very versatile and can be served either warm or cold. It is perfect with barbecued food, roast chicken or fish, or as a colourful vegetarian addition to the lunch table. You can easily make it ahead and keep it in the fridge – it tastes wonderful either way.

Method

  • Bring the edamame beans briefly to the boil, or cover them with boiling water, then drain them well.
  • Heat a frying pan with a splash of oil and fry the pointed cabbage over a high heat for a couple of minutes. It should only wilt slightly and still have bite. Season with salt and freshly ground pepper.
  • Spread the cabbage on a large plate and top with the edamame beans, chopped pistachios and crumbled feta.
  • Drizzle with freshly squeezed lemon juice and a little olive oil, then finish with the grated lemon zest, freshly ground pepper and a little flat-leaf parsley, if you like.
Serve straight away, or keep the salad in the fridge until serving – it can also be served cold.
