The shared menu came as a series of courses that showed off the kitchen’s high standard and creativity.
Snacks
Cod with cucumber and herb oil – A fresh, elegant plate where the sharp herb oil lifted the cod.
Beetroot tartare with oyster and parsley – Surprisingly delicious, with a lovely balance of earthy sweetness and freshness.
Tarte fine with salmon, rygeost (Danish smoked fresh cheese) and radish – Crisp, creamy and lightly smoky – a truly delicious start to the meal.
Middle courses
Linguine with lobster bisque, dried bread and tomato – Intense, full-bodied flavour with silky pasta.
Halibut with bergamot, broccoli and unripe peaches – A beautiful, fresh plate where the peaches brought a sharp, tangy note.
Vitello Tonnato Plates Style – The classic Italian dish with creamy tuna sauce and tender veal.
Main courses – Family Style
We chose a combination of pork and beef, which turned out to be an excellent choice:
Crispy pork with carrots, ginger and brown butter – Perfectly cooked, with crisp crackling and juicy, succulent meat.
Braised beef with porcini bordelaise and pommes purée – Incredibly tender and full of flavour, with a deep sauce that complemented the meat perfectly.
Sides:
Baked celeriac with wholegrain mustard, tarragon and crispy pork scratchings – Rustic and full of flavour.
Fried cabbage with pistachio, pecorino and basil – A lovely balance of crisp and creamy.
Dessert
Baba au rhum with apple and pear compote and vanilla cream – A lovely end to the meal, with a delicious combination of sweet, sharp and spiced.
Drinks – Cocktails and wine
We opened the evening with cocktails in the bar, where we tried:
Pornstar Martini (DKK 110) – Classic and well balanced, with a pleasant sweetness.
Cosmopolitan (DKK 110) – Fresh and tangy, a perfect start to the evening.
With the food we opted for the wine pairing, which complemented the dishes perfectly.
