Restaurant Nordlandet

Panoramic views, caviar & Nordic gastronomy on Bornholm

We celebrated our copper wedding anniversary at Nordlandet, where the view, the food and the service came together as one. A menu full of personality and detail – and the children were served a gourmet version of rainbow ice cream. We will be going back, no doubt about it.

Restaurant Nordlandet– Caviar, Meursault and gourmet rainbow ice cream with a view of the Baltic Sea

There are dinners you remember for the flavours. And then there are the ones you remember for everything. Our copper wedding anniversary (12½ years, as the Danes count it) at Nordlandet was both – and then some.

We had been looking forward to this evening. After a few lovely days on Bornholm, with plenty of good eating and good experiences, we saved Nordlandet for last. It turned out to be exactly the right decision – because this became the culmination of both the love and the flavours.

First impressions and architecture with a sense of calm

We were staying at the hotel, so we could drift undisturbed from our room down to the restaurant. The building itself is a joy for anyone with an eye for architecture: a blend of Scandinavian simplicity and rawness – concrete, timber, steel and enormous expanses of glass that let the sea play the leading role. The whole place exudes balance. And it settles the body before you have even sat down.

That view, that light – and that company

We arrived in the golden hour, with the sun still hanging low over the Baltic. We took a few photos in front of the great panoramic window – memories like that are worth keeping – and then let the food take over. It was as if the view and the quiet, understated atmosphere in the room made the flavours even clearer. There was no stress here, no pressure – only a calm, present joy at being exactly here.

Service in a class of its own

The waiters at Nordlandet are what many restaurants dream of: grown-up, calm, professional – and with that twinkle in the eye. They guided us kindly through the menu, chose wine with a sure hand and still managed to make us feel at home. You felt seen and looked after – without it ever feeling forced.

And there is something special about service that includes children as naturally as it does adults. Our girls, Alberte and Olivia, were met with smiles and affectionate attention – and were given not just “something from the menu” but small, delicious morsels of fish and bread that made them smile. That is an art.

What we ate at Restaurant Nordlandet

Starters

Rossini Caviar (white sturgeon, 30g)
Served with warm, airy waffles, whipped crème fraîche and red onion. A lavish, luxurious serving of silky, lightly salted caviar. It can be shared between two – but it wasn’t this evening 😉 The flavour was rich, balanced and made for a perfect start.

Potato gnocchi
Fried mushrooms, Bornholm wild garlic and a creamy whey sauce. A spring-fresh, umami-rich dish that balanced soft against crisp. Beautifully plated and full of depth.

Main courses

Sashi chuck eye, cooked pink
With aubergine, new-season onions and a robust red wine sauce with bone marrow and mustard seeds. The meat was tender and juicy, the sauce full-bodied and intense – everything hit the mark and worked wonderfully with the glass of Meursault we had chosen to go with it.

Pan-fried zander
White asparagus, broccoli leaves, pickled green tomatoes and sauce Véronique. A dish in balance, with delicate green notes and freshness. The fish was perfectly cooked, and the sauce added classic elegance.

Desserts

Lemon crémeux
Burnt meringue, buckwheat and sweet woodruff ice cream. Sharp, sweet and crunchy – a dessert with both finesse and character. The woodruff and the meringue gave an edge to the fresh lemon.

Rhubarb
Lightly macerated raw fruit, compote, sorbet and a lemon and birch cake. It tasted like a May morning – floral, fresh and well judged. A light and playful finish.

Children’s dessert

Rainbow ice cream – gourmet edition
Several kinds of ice cream, decorations and sprinkles – plated with love and just as much care as the adults’ desserts. A huge experience for Alberte and Olivia, and a big plus to the kitchen for thinking about the details here too.

Drinks

Champagne to start

Meursault (white Burgundy) – creamy, nutty and precise enough to keep pace with both the caviar and the zander
