Have you also fallen for the cottage cheese wraps trending on TikTok and Instagram right now? Then try my version – a protein- and fibre-rich kale wrap with cottage cheese and pointed cabbage (also sold as sweetheart or hispi cabbage) that keeps you full and tastes wonderful.
The wrap is made from a simple base of cottage cheese and egg, here mixed with chopped kale and finely shredded pointed cabbage – two vegetables that bring plenty of flavour, texture and fibre. You can also add a little sesame or spices such as cumin or garlic powder if you want to boost the flavour.
The finished wrap is baked as one large “bread” on a baking tray and can either be rolled up like a classic wrap or cut into slices and used as sandwich bread or toast. It is brilliant for both lunch and dinner – and you can fill it with exactly what you fancy.
Suggested fillings
- Warm chicken or chicken kebab
- Salmon, tuna or egg
- Hummus, pesto or cream cheese
- Fresh vegetables such as lettuce, tomatoes, avocado and red onion
- Chilli sauce, tahini dressing or tzatziki
You can also use it as a pizza base or top it with cheese and bake it until lightly crisp – so many possibilities in one and the same recipe.
Protein, fibre and staying power in one wrap
This kale wrap is more than just a trend – it is a small nutritional powerhouse. The combination of cottage cheese, egg, pointed cabbage and kale gives you both a solid dose of protein and plenty of fibre, which helps keep you full for longer and keeps your blood sugar steady.
The wrap has a good structure, so you get a “bread-like” feel, but without the fast carbohydrates. It can easily be made the day before and kept in the fridge – which makes it perfect for meal prep, packed lunches and busy days.
It is a brilliant way to get more vegetables into your diet without it feeling like a salad – and with all the possible variations in filling, you will never tire of it.
Kale wrap with pointed cabbage and cottage cheese
Ingredients
- 150 g cottage cheese
- 4 eggs
- 80 g kale, finely chopped
- 160 g pointed cabbage, finely shredded
- 2 tbsp sesame seeds – optional
- Salt and freshly ground pepper
Suggested fillings
- Ham, salad vegetables and dressing
- Chicken, bacon and curry dressing
- Tuna salad, avocado and salad vegetables
- Parma ham, mozzarella and pesto
Method
- Blend the cottage cheese and eggs in a mini chopper or similar – season with salt and freshly ground pepper.
- Put the kale, pointed cabbage, sesame seeds and egg mixture in a bowl and stir well.
- Spread it on a baking tray lined with baking parchment. Use a spatula or similar to spread it into a thin, even layer.
- Bake the kale wrap in a preheated fan oven at 180°C for about 30 minutes.Let it cool slightly before removing it from the baking parchment and filling it as you like.
- I turn it over so the top faces outwards, as it has a nice texture. I then filled this one with dressing, ham, fresh vegetables and a little chilli mayo. Take care not to overfill it.Then roll it up along the wide side or the narrow side – it is up to you.
