Heat a little oil in a saucepan and sauté the onion, pepper and garlic for a couple of minutes.
Add the beef and brown it well, then season with salt and pepper.
Pour in the barbecue sauce, Worcestershire sauce, ketchup, mustard and chilli sauce and heat through thoroughly. Do not let it "reduce" — it should stay nice and sloppy.
Season to taste with salt and pepper, turn off the heat and leave the filling to stand while you roll out the pizza bases.
The pizzas
Divide the dough into 4 and roll out into thin rounds about 30 cm in diameter.
Scatter half the cheddar over the bases, then top with the Sloppy Joe filling and sprinkle the rest of the cheddar over the filling.*I brushed the outer edges of the pizzas with a thin layer of barbecue sauce. You can also use ordinary pizza sauce, or leave it out altogether.
Bake the pizzas in a preheated oven (conventional, top and bottom heat) at 250°C for about 12-15 min, until crisp and golden. Keep an eye on them: ovens vary.
Serve the pizzas with a scattering of finely chopped spring onions and, if you like, finely chopped fresh jalapeños.
